This elegant fish with asparagus and orange is a wonderful example of the 'en papillote' technique, where ingredients are steamed inside a parchment parcel. Using fresh halibut or cod, this diabetes-friendly main course relies on fragrant tarragon and a splash of citrus to create a delicate, savoury sauce as it bakes. The method locks in moisture and preserves the vibrant green colour of the slender asparagus spears, making it a sophisticated yet simple choice for a midweek dinner.
As a heart-healthy and low-carb option, this dish is perfect for those seeking a nutritious, balanced meal without sacrificing flavour. The parcels can be prepared up to four hours in advance and chilled, making it an excellent choice for fuss-free entertaining. Serve these individual packets directly onto plates to capture the aromatic steam when opened, perhaps accompanied by a few steamed new potatoes or a crisp green salad.
