These creamy lemon prawns offer a bright and zesty meal that is remarkably light yet satisfying. By using a base of fat-free yoghurt and reduced-fat soured cream combined with fresh tarragon and chives, this dish achieves a luxurious texture without the heavy saturated fats. The addition of crunchy broccoli and peppery rocket provides a wonderful contrast to the succulent prawns, creating a vibrant lunch or quick midweek dinner that celebrates fresh, seasonal flavours.
As a diabetes-friendly option, this recipe utilises tofu noodles to keep the carbohydrate content low. They are an excellent shop-bought alternative to traditional pasta, absorbing the citrus-infused dressing beautifully. High in protein and packed with nutrients, this versatile seafood dish is ideal for anyone looking for a heart-healthy, balanced meal that doesn't compromise on taste or quality.
