This vibrant chipotle turkey with charred corn salsa is a fantastic choice for those seeking a fresh, diabetes-friendly meal that doesn't compromise on flavour. The turkey fillets are lightly spiced with chipotle chilli powder, providing a gentle smoky warmth that pairs beautifully with the sweet, caramelised notes of the charred corn. It is a lean, protein-rich dish that feels light yet satisfying, making it ideal for a quick weeknight dinner.
Preparing the salsa with fresh lime and coriander adds a zesty brightness that lifts the whole plate. As this recipe is naturally low in carbohydrates and high in nutrients, it fits perfectly into a balanced healthy eating plan. Serve it on its own for a low-carb option, or with a small portion of brown rice for a more substantial, heart-healthy feast.

575g fresh turkey breast fillets
2 teaspoons chipotle chilli powder
4 tablespoons corn oil
1 medium green pepper, diced
1 small red onion, diced

How to make Chipotle Turkey Cutlets with Charred Corn Salsa
Char corn in heavy medium nonstick skillet over medium-high heat, stirring often, about 4 minutes. Set aside.
Sprinkle turkey on both sides with chilli powder; sprinkle with salt. Heat 1 tablespoon oil in large skillet over medium-high heat. Add half of turkey and sauté until cooked through, about 1 1/2 minutes per side. Transfer to plate. Repeat with 1 tablespoon oil and remaining turkey.
Add 2 tablespoons oil to drippings in skillet. Add pepper and onion; sauté 3 minutes. Increase heat to high and add charred corn. Sauté until peppers begin to brown, about 3 minutes longer. Stir in coriander and lime juice. Season salsa with salt and pepper; transfer to medium bowl. Return turkey to skillet and reheat, about 1 minute. Spoon salsa over turkey and serve with lime wedges.
