This elegant summer melon with fig and prosciutto fruit cup is a sophisticated take on the classic Italian pairing of sweet fruit and cured meat. By combining three varieties of melon with honeyed black figs and peppery rocket, this dairy-free starter offers a beautiful balance of textures and vibrant seasonal colours. It is an ideal choice for a light lunch or a refreshing first course during the warmer months.
While this dish is naturally dairy-free when served without the garnish, the addition of shaved ricotta salata adds a pleasant salty note that complements the Tuscan olive oil. The hint of chilli flakes provides a subtle heat, elevating the natural sweetness of the fruit. This effortless assembly is perfect for alfresco entertaining or a quick, healthy weekend brunch.
