This vibrant prawn, mango and avocado salad is a refreshing dairy-free starter or light lunch that perfectly balances sweet, zingy, and savoury flavours. Using succulent king prawns and buttery avocado, the dish is lifted by the tropical sweetness of ripe mango. It is a colourful, elegant choice for summer dining, offering a sophisticated contrast of textures that feels indulgent yet remains wonderfully healthy.
The secret to this recipe lies in the simple Asian-inspired vinaigrette, which combines piquant ginger with a gentle heat from the sweet chilli sauce. It is an ideal dish for those seeking a quick, nutritious meal that requires no cooking. Serve it on individual plates for a formal dinner party or as a fresh weekend platter to share with friends.
