This vibrant radicchio and plum salad is a sophisticated dairy-free dish that masterfully balances contrasting flavours and textures. The naturally bitter notes of the radicchio provide a crisp base for the sweet, juicy plum wedges and salty Gaeta olives. By using the rendered bacon fat to create a warm shallot and sherry vinegar dressing, you infuse every leaf with a savoury richness that ties the entire plate together.
Ideal as a light autumnal lunch or a distinctive starter for a dinner party, this colourful salad is both healthy and satisfying. The addition of crispy bacon adds a delightful crunch, making it a versatile option for those seeking a gluten-free and dairy-free meal that doesn't compromise on taste. Serve it on a large platter for a beautiful table centrepiece.

Ingredients for Radicchio and Plum Salad
4 slices bacon
1 small shallot, finely chopped
45ml sherry vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
1 head of radicchio, leaves separated, larger leaves torn
4 plums, cut into wedges
60ml Gaeta olives
How to make Radicchio and Plum Salad
Cook bacon in dry medium skillet over medium-low heat, turning occasionally, until crisp, 8–12 minutes. Transfer to paper towels to drain.
Reduce heat to low and cook shallot in same skillet, stirring often, until translucent, about 2 minutes. Add vinegar, oil, mustard, and 1 tablespoon water and whisk until smooth.
Toss radicchio, plums, and olives in a large bowl. Drizzle dressing over; season with salt and pepper. Toss to coat.
Transfer salad to a platter, then crumble bacon over.
