This parsnip, yam and watercress chowder is a sophisticated take on a seasonal vegetable soup. The natural sweetness of the parsnips and yams pairs beautifully with the tartness of Granny Smith apples, while a hint of nutmeg adds a warm, aromatic depth. It is a wonderfully textured dish, using a portion of blended vegetables to create a velvety base that contrasts with the tender chunks of root vegetables.
As a versatile dairy-free option, this comforting chowder makes for a nutritious midweek lunch or an elegant starter for a weekend dinner party. The addition of fresh, peppery watercress at the final stage provides a vibrant colour and a crisp finish that balances the earthy flavours of the tubers. Serve it alongside some crusty warm bread for a truly satisfying homemade meal.
