Parsnip and Hazelnut Gratin with Bacon

This parsnip and hazelnut gratin with bacon offers a sophisticated twist on a classic winter side dish. The earthy sweetness of the parsnips is beautifully balanced by the salty, smoky crunch of golden bacon, while toasted hazelnuts add a satisfying depth of flavour. It is a wonderful alternative to traditional potato-based bakes, providing a more fragrant and slightly lighter texture that pairs perfectly with roast poultry or game.

As a dairy-free option, this savoury bake ensures that everyone at the table can enjoy a rich and indulgent accompaniment. The addition of fresh sage provides a lovely aromatic finish that cuts through the creaminess. This gratin is an excellent choice for a Sunday lunch or a festive gathering, providing a wholesome, homemade feel that feels genuinely special.
