This vibrant lime and crab soup is a refreshing, dairy-free dish that perfectly balances zest and spice. Using a base of sweetcorn blended with zingy lime and smoky chipotle, it offers a velvety texture without the need for cream. The combination of fresh seafood and bright citrus notes makes it an ideal choice for a sophisticated starter or a light, nutritious lunch during the warmer months.
Packed with lean protein from the crabmeat and healthy fats from the avocado garnish, this recipe is as nourishing as it is flavourful. The addition of crushed cumin and fresh coriander provides an aromatic depth that complements the sweetness of the corn. Serve it chilled for a contemporary take on a summer soup, finished with a few tortilla crisps for a satisfying crunch.
