This vibrant lemony potato salad is a refreshing departure from heavier, traditional versions. By swapping out heavier ingredients for a zestier dressing, this dairy-free side dish perfectly balances the earthy flavour of tender boiling potatoes with the bright acidity of fresh lemon and the crunch of finely chopped celery. It is an ideal accompaniment for summer barbecues or as a light lunch component when you want something satisfying yet bright.
As a versatile addition to your recipe repertoire, this salad relies on simple larder staples and fresh herbs to create a sophisticated profile. The addition of fresh chives provides a delicate onion note that complements the citrus beautifully. For the best result, ensure the potatoes are completely cool before tossing them with the mayonnaise-based dressing to maintain a creamy, luxurious consistency that holds up well for outdoor dining.
