Jasmine Rice with Garlic, Ginger, and Coriander

This fragrant jasmine rice with garlic and ginger is a wonderful way to elevate a simple side dish into something truly special. By sautéing aromatic ginger and garlic before simmering the grains in a light chicken stock, the rice absorbs a deep, savoury flavour that far surpasses plain boiled varieties. The addition of fresh coriander provides a vibrant, herbal lift that cuts through the warmth of the spices.

Naturally dairy-free and highly versatile, this dish is an excellent accompaniment to grilled fish, roast chicken, or a spicy vegetable stir-fry. It is particularly well-suited for those looking for a gluten-free and wholesome base for their evening meal. Simply fluff with a fork just before serving to release the wonderful citrusy aroma of the steamed herbs.
