Green Tomato Soup

This vibrant green tomato soup is the perfect way to make use of those end-of-season unripe tomatoes. With a bright, slightly tart flavour profile that differs beautifully from traditional red varieties, this dairy-free dish is enhanced by the salty depth of cured ham and the mild sweetness of sautéed spring onions. It is a light yet satisfying option for a quick lunch or a unique starter that brings a fresh, garden-inspired feel to your table.

Quick to prepare and naturally low in fat, this homemade soup fits easily into a healthy weekly meal plan. The combination of garlic and bay leaf provides a fragrant, savoury base that complements the acidity of the green fruit perfectly. For those who aren't following a strict dairy-free diet, a swirl of soured cream adds a lovely richness to finish.
