Ingredients for Sweet pickle potato salad

  • 450 g small red potatoes, scrubbed

  • salt and pepper

  • 60 g finely chopped onion

  • 120 g sweet pickle relish

  • 120 ml mayonnaise

  • 4 hard-boiled eggs, finely chopped

How to make Sweet pickle potato salad

  1. Place the potatoes in a large pot and cover them with cold water by 2.5 cm (1 inch). Add a pinch of salt.

  2. Bring the water to a boil and cook the potatoes for 15 minutes, or until they are tender but not mushy. Drain the potatoes and set aside until they are cool enough to handle.

  3. While the potatoes are still warm, cut them into quarters and transfer them to a large bowl.

  4. Add the onion, relish, mayonnaise, and eggs to the bowl. Toss everything together until well combined.
