  • 60 g unsalted butter, room temperature

  • 30 g white miso

  • 1/2 serrano chilli, finely grated

  • 40 g ginger, peeled, finely grated

  • 340 g Romano, wax, and/or green beans

  • 10 ml extra-virgin olive oil

  • lime wedges (for serving), toasted sesame seeds (optional)

How to make Skillet-charred summer beans with miso butter

  1. Mix the butter, miso, chilli, and ginger together in a small bowl until smooth.

  2. Heat a large frying pan, preferably cast iron, over medium-high heat.

  3. Toss the beans with the oil in a medium bowl, then transfer them to the frying pan. Cook, tossing occasionally, until they are charred in spots and crisp-tender, about 4 minutes.

  4. Spread the miso butter onto a serving platter. Arrange the beans on top; their residual heat will melt the butter into a saucy dressing.
