Ingredients for Maple meatloaf muffins

  • 480 ml water

  • 300 g diced sweet potatoes

  • 140 g streaky bacon, cooked, chopped

  • 15 ml chopped fresh thyme, or 5 ml dried (optional)

  • 2.5 g garlic powder

  • sea salt or pink Himalayan sea salt to taste

  • black pepper to taste (if tolerated)

  • 60 ml maple syrup

  • 900 g minced beef or bison

How to make Maple meatloaf muffins

  1. Preheat the oven to 180°C (conventional) or 160°C (fan).

  2. Fill a medium-sized cooking pot with water and place a steamer basket inside. Bring the water to a boil over high heat.

  3. Add the sweet potatoes to the steamer basket, cover, and steam for 10–12 minutes, or until the potatoes are tender and easily break apart with a fork. Drain any remaining water and allow the potatoes to cool.

  4. In a food processor, combine the cooked sweet potatoes, bacon, thyme, garlic powder, salt, pepper, and maple syrup. Blend until you achieve a thick paste.

  5. Transfer the meat to a large bowl, then add the sweet potato mixture. Mix well until fully combined.

  6. Gently spoon 80 ml of the meatloaf mixture into each of the 12 muffin cups.

  7. Bake on the middle rack for 15–20 minutes, or until the meatloaf muffins are cooked through.

  8. Remove the cooked meatloaf muffins from the oven and repeat the process with any remaining meatloaf mixture.
