White Cheddar Puffs with spring onions

These savoury white cheddar puffs with spring onions are a sophisticated take on the classic French gougère. Featuring a light choux pastry base enriched with sharp, vintage cheddar and the mild bite of spring onions, they offer a wonderful contrast between a crisp exterior and a soft, airy centre. This vegetarian recipe is exceptionally versatile, making it a reliable choice for elegant dinner party nibbles or a comforting afternoon snack when you want something more substantial than a biscuit.

Preparing these cheesy bites is straightforward and highly convenient for entertaining, as the dough can be shaped and stored in the fridge or freezer well in advance. Simply pop them into the oven straight from the cold and bake until golden and well-risen. For the best flavour and texture, serve them warm from the tray while the cheese is still fragrant and the pastry remains perfectly crisp.
