Mozzarella and Pepper Cooler-Pressed Sandwiches

These mozzarella and pepper cooler-pressed sandwiches are the ultimate portable vegetarian meal for summer outings. By combining creamy bocconcini with vibrant roasted red peppers and fragrant herbs, you create a Mediterranean-inspired filling that only improves with time. The secret lies in removing the bread’s interior crumb, allowing plenty of space for the cheese and its flavoured oil to soak into the crusty baguette.

Designed to be prepared ahead of time, this clever recipe uses the natural weight of your picnic cool box to compress the layers together. This pressing process ensures every bite is infused with savoury flavour while keeping the sandwich easy to slice and serve. It is a brilliant, mess-free option for family hikes, seaside trips, or a sophisticated garden lunch.

Ingredients for Mozzarella and Pepper Cooler-Pressed Sandwiches

  • 1 (140g) jar roasted red peppers, drained and roughly chopped

  • 1 pinch hot-pepper flakes (optional for kids)

  • 1 tablespoon roughly chopped Italian parsley, or 1 teaspoon chopped fresh oregano (optional for kids)

  • 1 (170g) container bocconcini in oil (or 180ml fresh mozzarella in oil, torn into pieces), undrained

  • 1/2 thin 18-inch baguette, sliced lengthwise, interior crumb removed

How to make Mozzarella and Pepper Cooler-Pressed Sandwiches

  1. In a medium bowl, combine the first four ingredients (including the bocconcini's or mozzarella's marinade).

  2. Fill the baguette with the mixture.

  3. Close the baguette and wrap it tightly in waxed paper, then in aluminum foil.

  4. Place the sandwich at the bottom of the cooler so the weight of the other contents compresses the sandwich and allows the juices to soak into the bread.
