These Moscatel-glazed parsnips offer a sophisticated twist on a classic British side dish. By caramelising sugar and butter before deglazing with fragrant Moscatel vinegar, the parsnips develop a deep, complex sweetness that balances their natural earthiness. The result is a vibrant, golden finish that looks beautiful on the plate and provides a refreshing sharpness to cut through richer flavours.
As a versatile vegetarian dish, these parsnips are an excellent addition to a traditional Sunday roast or a festive Christmas spread. The method ensures they are perfectly tender on the inside while remaining sticky and glossy on the outside. They are equally delicious served straight from the frying pan or enjoyed at room temperature as part of a seasonal buffet.

Ingredients for Moscatel-Glazed Parsnips
1 tablespoon sugar
2 tablespoons unsalted butter
900g parsnips, peeled, cored, and cut into 1/4-inch-thick sticks
60ml Moscatel vinegar or balsamic vinegar
120ml water
How to make Moscatel-Glazed Parsnips
Heat sugar in centre of a 12-inch heavy skillet over medium heat until it starts to melt. Cook, tilting skillet occasionally so sugar melts evenly, until golden brown. Stir in butter, then add parsnips and cook, stirring, 2 minutes. Add vinegar, water, 3/4 teaspoons salt, and 1/4 teaspoons pepper.
Reduce heat to low and simmer, covered, until parsnips are just tender, 10 to 15 minutes. Remove lid and simmer, stirring occasionally, until liquid is reduced to a glaze and parsnips are caramelized, about 5 minutes. Serve warm or at room temperature.
