Mexican Chopped Salad with Honey-Lime Dressing

This vibrant Mexican chopped salad is a celebration of texture and fresh flavours, combining crisp romaine lettuce with creamy avocado and earthy black beans. The inclusion of jicama and radishes adds a refreshing crunch, while the sweetness of the corn balances the subtle heat from the jalapeño. It is a colourful, nutrient-dense vegetarian dish that works beautifully as a standalone lunch or a bright side dish for summer dining.

Simple to assemble and naturally healthy, this recipe is elevated by a zesty honey-lime dressing that ties the savoury ingredients together. The salty tang of crumbled feta provides a lovely contrast to the citrus notes, making it a crowd-pleasing option for gatherings. Serve it alongside grilled proteins or enjoy it exactly as it is for a light, flavourful meal.
