Mesclun and Cherry Salad with Warm Goat Cheese

This elegant vegetarian salad offers a sophisticated blend of textures and flavours, pairing creamy goat’s cheese with the bright sweetness of seasonal dark cherries. The almond crust provides a satisfying crunch that contrasts beautifully with the warm, softened cheese, while the aniseed notes of fresh fennel and fragrant tarragon elevate the simple salad base. It is a dish that feels indulgent yet remains light enough for a summer lunch or a polished dinner party starter.

Quick to assemble and visually striking, this salad is an excellent choice for entertaining as the cheese and dressing can be prepared a few hours in advance. Using high-quality almond oil in the vinaigrette enhances the nutty profile of the dish, making it a nutritious and flavourful way to enjoy fresh, seasonal produce.
