These vibrant Greek salad pita sandwiches offer a fresh and crunchy twist on a Mediterranean classic. This vegetarian dish combines juicy plum tomatoes, crisp cucumber and sharp red onion with the salty tang of crumbled feta cheese. The simple red wine vinegar dressing brings all the flavours together, while the addition of radishes and fresh parsley adds a delightful peppery note and a burst of garden-fresh colour.

Ideal for a quick weekday lunch or a healthy picnic option, these stuffed pitas are incredibly practical as the salad filling can be prepared up to two days in advance.
