Aubergine Dip

This roasted aubergine dip is a vibrant vegetarian starter that celebrates the deep, smoky flavours of Mediterranean cooking. By slowly roasting the aubergines until tender and combining the silky purée with sweet heirloom tomatoes and a hint of hot paprika, you create a dip that is both light and satisfying. The addition of low-fat yogurt provides a subtle tang that balances the richness of the vegetables, while fresh basil adds a final aromatic lift.

Perfect for a summer gathering or as a healthy afternoon snack, this homemade dip is naturally low in fat and packed with nutrients. Serve it chilled in a decorative bowl alongside crunchy crudités such as sticks of cucumber, pepper, and celery. It also works beautifully as part of a larger mezze platter with warm flatbreads and olives for a relaxed weekend lunch.
