This vibrant vegetarian dish combines the natural sweetness of sweet potato with the aromatic warmth of red curry paste, cumin and cinnamon. It is a comforting and creamy meal that uses skimmed milk and fat-free yogurt to create a silky texture without the need for heavy cream. The addition of fresh lime juice right at the end provides a zesty lift that perfectly balances the earthy notes of the spices.
Ideal for a quick midweek dinner or a nutritious lunch, this curried sweet potato is best enjoyed with warm, whole-grain paratha bread for dipping. By blending the potatoes into a smooth consistency, you create a satisfying, protein-rich sauce that is both heart-healthy and deeply flavourful. It is a simple yet sophisticated way to enjoy seasonal root vegetables.
