Caesar Potato Salad with Sugar Snap Peas

This vibrant Caesar potato salad with sugar snap peas is a sophisticated twist on a classic summer side dish. By using a variety of colourful baby potatoes alongside crisp radishes and sweet snap peas, it offers a wonderful contrast of textures that feels much lighter than traditional mayonnaise-based versions. The zesty dressing, enriched with sharp Dijon mustard and salty Parmesan, brings a punchy, savoury depth that perfectly complements the earthy vegetables.

As a versatile vegetarian dish, this salad is ideal for alfresco dining, garden parties or as a nutritious accompaniment to grilled halloumi. It is best served warm to allow the dressing to soak into the potatoes, but it travels exceptionally well for a gourmet picnic. Packed with fresh seasonal produce, it is a healthy and satisfying way to elevate your salad repertoire.
