These thyme-roasted sweet potatoes are a vibrant and fragrant addition to any meal, offering a sophisticated twist on the classic roasted root vegetable. By using fresh thyme and a hint of red pepper flakes, the natural sweetness of the potatoes is perfectly balanced with an earthy, savoury depth and a subtle warmth. The high roasting temperature ensures the edges become slightly caramelised while the centres remain soft and buttery.
As a naturally vegan side dish, this recipe is incredibly versatile and fits seamlessly into a plant-based diet or as a colourful accompaniment to a traditional roast dinner. Whether served hot from the oven or at room temperature as part of a seasonal salad spread, these herb-infused rounds are a simple yet impressive way to elevate everyday ingredients.
