Tender Chanterelle Salad

This tender chanterelle salad is a sophisticated way to celebrate the delicate, peppery flavour of wild mushrooms. By gently steaming the chanterelles rather than frying them, you preserve their beautiful golden colour and velvety texture, allowing them to soak up the bright, zesty notes of the dressing. It is a wonderful example of a simple vegan dish where high-quality ingredients are allowed to shine without being over-complicated.

Served as an elegant starter or a light lunch alongside crusty sourdough, this recipe is perfect for autumn when wild mushrooms are at their peak. The combination of Dijon mustard, white wine vinegar and fresh flat-leaf parsley creates a punchy vinaigrette that cuts through the earthiness of the fungi. It is a nutritious, low-fat option that brings a touch of gourmet flair to your seasonal menu.

Ingredients for Tender Chanterelle Salad

  • 450g fresh chanterelles, brushed clean and trimmed (halved or quartered if large)

  • 45ml extra-virgin olive oil

  • 2 tablespoons chopped flat-leaf parsley

  • 2 tablespoons white wine vinegar

  • 2 teaspoons Dijon mustard

  • 1 small shallot, thinly sliced

  • 1 small garlic clove, minced

  • Kosher salt, freshly ground black pepper

  • Fresh lemon juice

How to make Tender Chanterelle Salad

Place mushrooms in a steamer basket and set over a pot filled with 1" gently simmering water (do not allow water to touch mushrooms). Cover and steam mushrooms until tender, about 5 minutes. Transfer mushrooms to a baking sheet and let cool slightly.

Meanwhile, whisk oil, parsley, vinegar, Dijon mustard, shallot, and garlic in a medium bowl. Season with salt, pepper, and lemon juice. Add mushrooms; toss to coat evenly. Let marinate for 30 minutes. Season to taste with salt, pepper, and more lemon juice, if desired.
