This sophisticated sherry tomato granita is a refined vegan starter that balances the natural sweetness of sun-ripened beefsteak tomatoes with the complex, nutty notes of cream Sherry. Traditionally served as a palate cleanser or a light summer appetiser, this frozen dish offers a unique savoury twist on the classic Italian ice. The vibrant red hue and icy texture make it a visually striking addition to any dinner party menu, especially during the warmer months when tomatoes are at their seasonal peak.
Simplicity is key to this recipe, relying on high-quality ingredients and a gentle freezing process to achieve the perfect crystalline consistency. The accompanying salad of julienned celery, cucumber, and peppery radishes provides a refreshing crunch that contrasts beautifully with the melting ice. Healthy, light, and naturally dairy-free, it is an elegant choice for those seeking a modern, shop-bought alternative for a dinner party course.

Ingredients for Sherry Tomato Granita
450g beefsteak tomatoes, cut into 2-inch wedges
120ml cream Sherry
1 teaspoon sugar
1 tablespoon plus 1/2 teaspoons Sherry vinegar, divided
2 celery ribs
1/2 seedless cucumber
2 large radishes
1/2 teaspoons extra-virgin olive oil
How to make Sherry Tomato Granita
Blend together tomatoes, Sherry, sugar, 1 tablespoon vinegar, and 1/4 teaspoons each of salt and pepper in a blender until smooth. Strain through a fine-mesh sieve into a bowl, pressing on and then discarding solids.
Pour tomato mixture into an 8- to 9-inch nonreactive baking dish and freeze until partially frozen, about 1 hour. Scrape and stir with a fork, crushing any lumps. Continue to freeze, scraping once or twice, until evenly frozen, about 2 hours more.
Cut celery, cucumber, and radishes into fine julienne strips, then toss in a bowl with oil, remaining 1/2 teaspoons vinegar, and salt and pepper to taste.
Serve granita with vegetable julienne.
