This vibrant shaved root vegetable salad is a showcase of seasonal textures and bright, earthy flavours. By using a mandoline to finely shave raw beetroot, earthy turnips, and sweet carrots, you transform humble winter produce into a sophisticated, colourful dish. The addition of fresh flat-leaf parsley and crunchy hazelnuts provides a wonderful contrast to the crisp, thin vegetables, making it a feast for both the eyes and the palate.
As a naturally vegan recipe, this dish is an excellent choice for a light lunch or a refreshing side to accompany a heavier main course. The citrus-based dressing, enriched with fragrant hazelnut oil, balances the natural sweetness of the root vegetables perfectly. Serving the red beetroot separately until the final plating ensures the other vegetables maintain their bright individual colours, creating a stunning presentation for guests.
