This vibrant dish of roasted fingerling potatoes with red and yellow pipérade offers a sophisticated twist on a classic Basque flavour profile. Traditionally a slow-cooked stew of peppers and onions, this version transforms the pipérade into a caramelised base for golden, tender potatoes. The natural sweetness of the roasted peppers provides a beautiful contrast to the earthy potatoes, while a bright splash of Champagne vinegar and a flurry of fresh herbs add a clean, zesty finish.
As a naturally vegan recipe, it is a versatile addition to any Mediterranean-inspired spread or a hearty Sunday lunch. The combination of fresh basil, thyme, and chives ensures every bite is packed with aromatic flavour. It is an excellent choice for entertaining, as the vegetables can be roasted ahead of time and quickly finished with fresh herbs just before serving to maintain their bright, seasonal appeal.
