Ingredients for Rice and Beans
1 tablespoon olive oil
1 medium onion, peeled and chopped
1 medium green pepper, seeded and chopped
2 garlic cloves, thinly sliced
1/2 teaspoons kosher salt
1 400g box boil-in-bag rice, uncooked
1 400g can red kidney beans, drained and rinsed
Freshly ground black pepper to taste
How to make Rice and Beans
Heat the olive oil in a heavy saucepan over medium-high heat.
Add the onion, pepper, garlic, and salt and sauté, stirring, for about 5 minutes.
Pour the rice from the bag into the pan, then stir in the beans and 300ml water. Bring to a boil.
Cover, reduce heat to medium-low, and simmer until the liquid is absorbed, 10 to 15 minutes.
Remove from heat and let stand, covered, for 5 minutes.
Season with the black pepper, stir gently, and serve.
