This Mediterranean-style potato salad with olives and peppers is a vibrant, vegan-friendly twist on a classic side dish. Unlike traditional mayo-based versions, this recipe uses a zesty garlic and Sherry vinegar dressing that soaks into the warm potatoes for maximum flavour. The addition of smoky roasted red peppers and salty brine-cured olives creates a sophisticated profile that works beautifully at any summer gathering or as part of a plant-based spread.
Ideal for prep-ahead lunches or effortless entertaining, this dish is naturally dairy-free and packed with fresh flat-leaf parsley for a hit of colour. Serving the potatoes while they are still slightly warm ensures they absorb the richness of the olive oil, though it tastes equally delicious at room temperature. Pair it with grilled vegetables or a crisp green salad for a light and healthy homemade meal.
