These vegan kimchi and matzo pancakes offer a brilliant fusion of textures, combining the crispness of traditional matzo with the punchy, fermented heat of Korean kimchi. The crushed matzo acts as a unique binder, absorbing the tangy kimchi juice to ensure every bite is packed with depth. It is a creative way to use up larder staples while introducing a vibrant, savoury kick to your home cooking repertoire.
Perfect as a light lunch or a quick evening snack, these pancakes are naturally plant-based and incredibly simple to prepare. The potato starch ensures a satisfyingly crunchy exterior that contrasts beautifully with the tender, vegetable-packed middle. Serve them hot from the frying pan with a simple soy dipping sauce or a dollop of dairy-free soured cream for a delicious fusion treat.
Ingredients for Matzo-Kimchi Pancakes
1 sheet matzo, crushed into very fine pieces
3 tablespoons kimchi juice
3 cebollas de primavera, finamente picadas
150g chopped drained kimchi
3 tablespoons finely chopped onion
3 tablespoons potato starch
1 cucharadita de sal kosher
1 cucharadita de azúcar
2 cucharadas de aceite vegetal, divididas
How to make Matzo-Kimchi Pancakes
Mix matzo and kimchi juice in a small bowl and let sit 8 minutes. Pour off excess liquid and mix in spring onions, kimchi, onion, potato starch, salt, and sugar.
Heat 1 tablespoon oil in a medium nonstick skillet over medium-high. Add half of batter to skillet and flatten into a thin pancake; cook until golden brown and crisp on both sides, about 4 minutes total. Transfer to a plate. Repeat with another 1 tablespoon oil and remaining batter.
