This vibrant German potato salad with dill is a refreshing alternative to traditional mayonnaise-based versions. By using waxy potatoes and a warm apple cider vinegar dressing, the salad develops a wonderful depth of flavour as the potatoes absorb the tangy liquid. The addition of toasted caraway seeds provides an authentic earthy note, whilst the fresh dill and spring onions add a bright, herbaceous lift that cuts through the richness of the olive oil.
As a naturally vegan side dish, this recipe is perfect for outdoor dining, summer barbecues or as part of a healthy midweek meal. It is incredibly versatile and can be served either warm or at room temperature, making it an excellent make-ahead option for gatherings. The lack of dairy also means it travels well for picnics and garden parties.
