Cold Sesame Noodles with Summer Vegetables

These cold sesame noodles with summer vegetables are the ultimate refreshing meal for warmer days. This vibrant vegan dish combines earthy buckwheat soba with a crisp medley of carrots, radishes, and peppers, all tossed in a zingy sriracha and sesame dressing. The contrast between the soft noodles and the crunchy matchstick vegetables creates a satisfying texture that feels both light and nourishing.

Prepared in under 20 minutes, this versatile salad is an excellent choice for a healthy weekday lunch or a simple outdoor dinner. It travels well, making it a brilliant option for picnics or office lunchboxes. For the best flavour, ensure the noodles are rinsed thoroughly in cold water to maintain their bite and prevent sticking before combining them with the fresh summer produce.
