This classic caponata is a celebration of Mediterranean flavours, bringing together the silky texture of sautéed aubergine with the sharp, salty punch of capers and red wine vinegar. It is a wonderfully versatile vegan dish that relies on simple store-cupboard staples like tinned tomatoes and garlic to create a deep, savoury sauce. The addition of fresh basil and toasted pine nuts provides a fragrant finish and a satisfying crunch that elevates the entire recipe.
Perfect as a healthy side dish or a light lunch, this homemade caponata can be served warm with crusty bread or chilled as part of a summer antipasti spread. As the flavours develop and mellow over time, it is an excellent make-ahead option for weekend entertaining or midweek meal prep. Whether enjoyed on its own or as a topping for bruschetta, it remains a timeless favourite for plant-based dining.
