Masala Popcorn

This aromatic masala popcorn offers a vibrant twist on a classic cinema snack, bringing bold Indian flavours to your next movie night. By tempering whole seeds, fresh curry leaves and fragrant spices in oil, you create a deeply savoury coating that transforms simple kernels into a sophisticated treat. The combination of earthy cumin and bright turmeric provides a beautiful golden colour and a complex taste that is far more satisfying than standard shop-bought options.

As a low-sugar recipe, this dish is an excellent choice for those seeking a healthier alternative to caramel or sweet popcorn. It is naturally light yet packed with heat from the fresh green chilli and Kashmiri powder, making it a brilliant accompaniment to a cold drink or a stand-alone afternoon snack. For the best experience, serve it warm while the spices are at their most fragrant.

  • 2 tablespoons canola oil

  • 1 teaspoon fennel seeds

  • 1 teaspoon coriander seeds

  • 1 teaspoon cumin seeds

  • 1 teaspoon coarsely chopped fresh Thai green chilli

  • 1/4 teaspoons ground turmeric

  • 1/8 teaspoons asafetida

  • 1/4 teaspoons sugar

  • 1/4 teaspoons salt

How to make Masala Popcorn

Place the popcorn in a large bowl.

In a small saucepan, heat the oil over medium-high heat until it shimmers. Add the fennel seeds, coriander seeds, and cumin seeds and let them crackle. Stir in the green chilli, curry leaves, Kashmiri chilli powder, turmeric, and asafetida. Pour the mixture over the popcorn. Add the sugar and salt and stir or toss to coat evenly. (Keep tossing as you eat it to distribute the spice.)
