This vibrant lime and chia refresher, traditionally known as Agua de Limón con Chía, is a beautifully balanced drink that offers a sophisticated twist on classic homemade limeade. By pulsing whole limes quickly, you capture the bright, zingy essential oils from the zest without any of the bitterness from the pith. The addition of chia seeds provides a lovely textural element and a subtle nutritional boost, making it a fantastic alternative to sugary fizzy drinks.
As a delicious low-sugar option, this recipe is ideal for hydrating on a warm afternoon or serving as a non-alcoholic zest-filled treat at a summer gathering. It is incredibly simple to prepare and keeps well in the fridge, allowing the flavours to develop and the seeds to soften slightly for the perfect refreshing consistency.

Ingredients for Agua de Limón con Chía (Limeade With Chia Seeds)
3 large limes, quartered
950ml water
120ml sugar, or more if needed
35g chia seeds
How to make Agua de Limón con Chía (Limeade With Chia Seeds)
Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.
