This vibrant miso pesto ramen offers a fresh, Japanese-inspired twist on the classic Italian sauce. By swapping traditional basil and pine nuts for earthy white miso, fresh coriander, and iron-rich baby spinach, you create a bright, savory dressing that clings perfectly to chewy ramen noodles. The result is a beautifully green, aromatic dish that feels both indulgent and nourishing, making it an ideal choice for a quick midweek meal or a sophisticated desk lunch.
As a versatile low-fat option, this recipe relies on heart-healthy sunflower oil and the deep umami depth of fermented soy rather than heavy creams. The pesto can even be prepared a day in advance and kept in the fridge, making the final assembly a matter of minutes. Serve it warm with a dusting of toasted sesame seeds for a satisfying, nutritious bowl that is as pleasing to the eye as it is to the palate.
