Ingredients for Rich Little Po'boy

  • 3 small ripe tomatoes, halved

  • Salt and freshly ground black pepper, to taste

  • 1 Italian bread (12 inches long)

  • 60ml mayonnaise

  • 110g thinly sliced rare roast beef

  • 4 thin slices ripe Brie cheese

  • 4 to 6 lettuce leaves, rinsed and patted dry

How to make Rich Little Po'boy

  1. Preheat a grill or grill; set the rack 3 inches from the heat source.

  2. Grill or grill the skin side of the tomatoes until slightly charred (15 minutes on the grill, 8 minutes under the grill). Sprinkle with salt and pepper. Set aside.
