These orange-soy-braised pork ribs offer a wonderful balance of savoury and sweet notes, creating a deeply comforting high-protein meal. The slow-braising process ensures the meat becomes incredibly tender, while the fresh orange juice and ginger provide a bright, aromatic lift to the rich soy sauce base. It is a simple yet impressive dish that fills the kitchen with a delicious fragrance as the sauce reduces into a thick, glossy glaze.
Perfect for a weekend dinner or a relaxed gathering, these ribs can be prepared in advance and finished just before serving. The combination of garlic and black pepper adds a gentle heat that complements the citrus profile beautifully. Serve them alongside steamed bok choy or fluffy jasmine rice to soak up the remaining syrupy glaze for a complete, nutritious meal the whole family will enjoy.

Ingredients for Orange-Soy-Braised Pork Ribs
1.8kg country-style pork ribs
1/2 teaspoons salt
350ml fresh orange juice
120ml soy sauce
2 tablespoons sugar
2 tablespoons finely chopped peeled fresh ginger
1 tablespoon minced garlic (3 cloves)
1/2 teaspoons coarsely ground black pepper
an 11- by 17-inch flameproof roasting pan
How to make Orange-Soy-Braised Pork Ribs
Put oven rack in middle position and preheat oven to 163°C.
Sprinkle ribs evenly with salt.
Bring orange juice, soy sauce, sugar, ginger, garlic, and pepper to a boil in roasting pan over moderately high heat, stirring until sugar is dissolved. Add ribs in 1 layer using tongs, turning to coat, and cover pan tightly with foil.
Braise ribs in oven until very tender, about 2 hours. (If making ahead, see cooks' note, below.)
Reduce oven temperature to 93°C.
Transfer ribs to a baking dish, arranging them in 1 layer, and keep warm in oven.
Skim fat from cooking liquid if desired, then make glaze by boiling liquid, uncovered, stirring occasionally, until syrupy and reduced to about 180ml , about 15 minutes. Brush glaze generously on ribs.
