One-Hour Prawns Paella

Ingredients for One-Hour Prawns Paella

  • 1 tablespoon olive oil

  • 230g 1/2-inch cubes smoked ham (about 275g )

  • 325g chopped onions

  • 160g chopped red pepper

  • 1/4 teaspoons (generous) saffron threads, crumbled

  • 1/4 teaspoons hot Spanish paprika or hot Hungarian paprika

  • 775ml (or more) low-salt chicken broth, divided

  • 350ml arborio rice or medium-grain white rice

  • 450g uncooked peeled deveined large prawns

  • 120ml pimiento-stuffed green olives, halved

How to make One-Hour Prawns Paella

Heat oil in heavy large skillet over medium-high heat. Add smoked ham, onions, and pepper, and sauté until golden brown, about 8 minutes. Stir in saffron and paprika, then 725ml broth and rice. Bring to boil. Sprinkle with salt and pepper. Reduce heat to low, cover, and simmer until rice is almost tender, about 15 minutes. Nestle prawns into rice, top with olives, and drizzle with 60ml (or more) broth to moisten. Cover and cook until prawns are just opaque in centre, about 6 minutes. Season to taste with more salt and pepper.
