Ingredients for Instant pot refried black beans

  • 450 g dried black beans (about 480 g)

  • 1 white onion, peeled, halved

  • 30 ml lard or white vegetable fat (e.g. Trex)

  • 8 g sea salt

  • 1 sprig coriander, plus more for serving

  • Grated cotija cheese, chopped radishes, and lime wedges (for serving)

  • An electric pressure cooker or Instant Pot

How to make Instant pot refried black beans

  1. Combine the beans, onion, lard, salt, a sprig of cilantro, and 1.5 litres of water in the cooker insert.

  2. Lock the lid in place, ensuring the steam-release valve is set to the sealed position.

  3. Select the “Manual” setting and programme the cooker for 22 minutes at high pressure. (It will take approximately 12 minutes for the pressure to build before cooking begins.)

  4. Once the cooking time has elapsed, turn off the cooker and allow the pressure to release naturally for about 23 minutes.

  5. Unlock the lid and set the heat to medium or “Sauté.”

  6. Bring the mixture to a strong simmer and mash the beans using a potato masher or a large wooden spoon.

  7. Continue to cook, stirring occasionally, until the liquid thickens, which should take about 15 minutes.

  8. Taste the beans and add more salt if necessary.

  9. Divide the beans among bowls and top with cheese, cilantro, radishes, and lime wedges.
