This aromatic Cajun prawn stew brings the deep, soulful flavours of Louisiana home cooking to your kitchen. The secret to this high-protein dish lies in the traditional roux, which is slowly darkened until it reaches a rich, chocolatey hue. This base provides a complex, nutty depth that perfectly complements the sweetness of the large prawns and the gentle heat of the cayenne pepper.
Ideal for a nutritious weekday dinner, this seafood stew is packed with lean protein and savoury vegetables including the classic Cajun 'holy trinity' of onion, celery and green pepper. Serve it over a generous portion of steamed white rice to soak up the fragrant, thickened sauce. It is a comforting yet healthy meal that is sure to become a household favourite.

How to make Cajun Prawns Stew
Stir together oil and flour in a 10-inch heavy skillet (preferably cast-iron) with a metal or wooden spatula, then cook over moderate heat, scraping back and forth constantly, until roux is the colour of light milk chocolate, 10 to 12 minutes.
Add onion, celery, and pepper and cook, scraping back and forth occasionally, until pepper is softened, about 8 minutes. Stir in clam juice, water, salt, and cayenne and simmer, stirring occasionally, until liquid is thickened, 8 to 10 minutes. Stir in prawns and simmer, stirring occasionally, until prawns is just cooked through, 3 to 4 minutes. Stir in spring onion greens and salt to taste.
