This classic beer-braised bratwurst is a fantastic high-protein option for your next summer barbecue. By simmering the sausages in a rich bath of golden ale, butter, and softened onions, you infuse the meat with a deep, savoury flavour that perfectly complements the charred exterior from the grill. It is a hearty, comforting dish that brings a taste of traditional German-style cookery to your outdoor gatherings.
Ideal for feeding a hungry crowd, these sausages are served in small, crusty rolls with a generous helping of sweet, beer-soaked onions and tangy whole-grain mustard. The addition of crisp dill pickles provides a refreshing contrast to the rich meat. Whether you are hosting a garden party or looking for a filling weekend lunch, this simple preparation method ensures juicy, flavourful results every time.

How to make Bratwurst in Beer
Prepare the grill for a medium-hot fire
Place the butter in a medium disposable foil roasting pan. Place the pan on the grill rack and cook until the butter melts. Add the onions and garlic (if using); cook until softened, three to five minutes. Add the beer and bring to a simmer. Place the pan on the low heat zone and keep the onion mixture warm.
Place the bratwurst on the grill rack. Grill, turning occasionally, until evenly charred, four to five minutes. Transfer the bratwurst to the onion mixture and let stand until ready to serve.
With tongs, place the bratwurst in the rolls. Serve with the onions, mustard, and pickle spears.
