This vibrant tomato and cucumber gazpacho is the ultimate refreshing dish for a warm summer day. A heart-healthy soup that celebrates seasonal produce, it combines sun-ripened tomatoes and crisp English cucumbers with a hint of garlic and fresh basil. The addition of a little mayonnaise and olive oil gives the soup a silky, sophisticated texture, while the anchovy paste provides a subtle savoury depth that balances the acidity of the red wine vinegar.
Perfect as a light lunch or an elegant starter for a garden party, this chilled soup is best prepared in advance to let the Mediterranean flavours meld together. Serve it in chilled bowls with a handful of crunchy Parmesan croutons for a satisfying contrast of textures. It is an excellent way to enjoy a nutrient-rich, hydrating meal that feels truly indulgent.
