Salmon Panzanella With Green Beans

This vibrant salmon panzanella with green beans is a modern, heart-healthy twist on the classic Italian bread salad. Featuring succulent grilled salmon and crisp-tender vegetables, it offers a wonderful contrast of textures and fresh, bright flavours. The marriage of juicy cherry tomatoes and fragrant basil makes it an ideal choice for a nutritious summer lunch or a light evening meal when you want something satisfying yet wholesome.

As a brilliant way to use up slightly firm whole-wheat baguette, this dish is packed with fibre and essential omega-3 fatty acids. The red wine vinegar dressing provides a sharp tang that cuts through the richness of the fish beautifully. Serve this colourful salad at room temperature, allowing the bread to soak up the savoury juices for a truly authentic Mediterranean experience.
