Warm Bacon-Mushroom Vinaigrette

This warm bacon and mushroom vinaigrette is a sophisticated way to add depth and professional flair to your favourite salads. Combining the smokiness of crisp bacon with the earthy notes of sautéed mushrooms, it creates a rich, savoury dressing that wilts greens perfectly. The use of sherry vinegar provides a bright acidity that balances the saltiness, making it an excellent choice for a hearty spinach or kale salad.

As a diabetes-friendly option, this recipe focuses on high-impact flavours without the need for added sugars or heavy thickeners. It is a versatile addition to any healthy meal plan and is equally delicious served over grilled chicken or roasted vegetables. You can even prepare it a day in advance, making it a convenient choice for busy midweek dinners.
