These elegant smoked whitefish on cucumber rounds offer a fresh and sophisticated start to any dinner party or seasonal gathering. This diabetes-friendly appetiser balances the rich, savoury depth of smoked fish with the crisp acidity of Granny Smith apples and a zingy lemon dressing. Using cucumber rounds as a natural base instead of crackers provides a refreshing crunch while keeping the dish light and low in carbohydrates.
Quick to assemble and visually striking, these bite-sized snacks are perfect for those seeking a healthy yet indulgent treat. The addition of soured cream and fresh dill creates a classic flavour profile that complements the smokiness of the whitefish beautifully. Serve these platters chilled as a refined canapé or a light afternoon snack that the whole family can enjoy.
