This elegant Scallops à la Provençale is a vibrant, dairy-free dish that captures the sunny flavours of southern France. By roasting sweet cherry tomatoes with fragrant garlic and fresh thyme, you create a rich, jammy base that perfectly complements the delicate sweetness of the sea scallops. The addition of fresh corn provides a delightful crunch and natural sweetness, making this a sophisticated yet remarkably simple traybake for any night of the week.
Ideal as a light dinner or a healthy weekend lunch, this seafood recipe is naturally low in fat while remaining high in protein. Serving the warm, roasted vegetables over a bed of peppery rocket adds a fresh dimension, while a splash of balsamic vinegar ties the savoury notes together. It is a fantastic option for those seeking a gluten-free and dairy-free Mediterranean meal that doesn't compromise on flavour.

How to make Scallops à La Provençal
Heat oven to 191°C. In a bowl, combine tomatoes with 2 tablespoons garlic, 3 teaspoons thyme, 3 teaspoons oil, 1/4 teaspoons salt and 1/4 teaspoons black pepper. Coat a rimmed sheet pan with cooking spray; spread tomato mixture on pan in a single layer. Bake, stirring once or twice, until tomatoes are soft and slightly charred, 20 to 25 minutes. Stir corn into tomato mixture. In same bowl, toss scallops with remaining 2 teaspoons thyme, 2 teaspoons oil, 1/2 tablespoons garlic, 1/4 teaspoons salt and 1/4 teaspoons black pepper. Place scallops on top of tomato mixture; bake until scallops are just cooked through, 12 to 15 minutes. Transfer scallops to a plate; cut in half. Stir vinegar and 2 tablespoons herbs into tomato mixture. Divide rocket, tomato mixture and scallops among 4 bowls; sprinkle with remaining 1 tablespoon herbs.
