Grilled Bluefish with Tomato and Herbs

This grilled bluefish with tomato and herbs is a vibrant, flavourful dish that celebrates the natural richness of oily fish. By topping the fillets with a zesty herb mayonnaise and thick slices of fresh tomato, the fish remains beautifully moist under the grill. The combination of dill and chives adds a bright, aromatic lift that balances the savoury depth of the mackerel or bluefish, creating a simple yet sophisticated main course.

As a diabetes-friendly recipe, this dish is naturally low in carbohydrates and rich in heart-healthy omega-3 fatty acids. It is an excellent choice for a nutritious midweek meal, providing a high-protein option that requires minimal preparation. Serve it alongside a crisp green salad or some steamed seasonal greens for a light and balanced dinner that doesn't compromise on taste.
